Diet friendly veggie fry up
I love a good fry up, who doesn't? But it's not the best thing for your waistline. So I've come up with a super easy veggie breakfast you can make at home that cuts down on the calories! I'm afraid the first job is to ditch the carby badness of toast and hash browns. But even without the carbs this breakfast feels like a treat and helps to keep you on track if you're trying to eat healthier.
2 Veggie sausages (or gluten free sausages)
5 cherry tomatoes
5 mushrooms (or two big ones)
2 eggs
1 salad tomato
1/2 tin baked beans
1/2 tbsp Olive oil
1 tsp Balsamic vinegar
1/2 tsp Basil
Garlic granules or finely chopped fresh
Salt and pepper
Preheat the oven to 200 degrees Celsius. Slice the salad tomato in half and put everything except the baked beans and eggs into a baking tray. Drizzle olive oil over the mushrooms and tomatoes. Season tomatoes and put a little dried basil and a drizzle of balsamic over the top of them. Next put the garlic on top of the mushrooms (or cut little scores and place the garlic in if you're using the fresh kind). Put into the oven for the length of time the sausage packet says.
Next you want to cook you baked beans in the microwave (follow instructions on the tin) and poach your eggs. If you've never poached eggs before just boil a pan of water, add a teaspoon of vinegar and gently crack your eggs in. Use a spoon to gently fold the white over the egg and cook for about 5 minutes. If you prefer fried eggs crack the eggs into the baking tray at the same time everything else goes in. Baked eggs are very similar to fried but better because they contain less oil.
And voila you have a fry up without the guilt!
