Quick and easy chocolate chip mug cake

Mug cakes have been popular for the past few years now, due not only to their simplicity but also because they are delicious.

Here's a super quick and easy recipe for a gluten-free and vegan mug cake, that tastes great too!

Ingredients

  • 2 tablespoons gluten free flour

  • 2 tablespoons peanut butter

  • 2 tablespoons almond milk

  • 1 tablespoon maple syrup

  • ¼ teaspoon baking soda

  • ½ teaspoon vanilla extract

  • Chocolate chips or chunks for topping

Make sure you big a fairly big mug, with a good handle so it won't burn your hand when you take it out the microwave.

You need either chocolate chips, or chocolate that you have chopped into chunks in preparation to make this mug cake.

Method

  1. Start by combining all the ingredients in the mug - except from the chocolate chunks. Use a fork to mix it together until it resembles a smooth cake batter. If it is too thick, then feel free to add some more milk.

  2. Microwave on high until the cake has risen – about 45-60 seconds. To check if it’s cooked, poke the top and it should spring back slightly – if it does not then try cooking it again for ten second intervals until it is done.

  3. Take it out the microwave (be careful as it will be piping hot!) and top with chocolate chunks. Enjoy!
